Want Milk?


Raw milk enthusiasts in Arizona can now legally buy Crème de la Moo from Queen Creek, according to this article in the Arizona Central. Meanwhile, Washington State has shut down raw milk distribution from one farm after six children contracted a potentially deadly strain of E. coli.

The raw-milk debate is heating up. Advocates say that raw milk is healthier and tastes better, but producers need to handle the milk carefully. Pasteurization covers a lot of mistakes. So far, only small farms can produce raw milk safely (and, as in Washington, not always then).

If you want to try raw milk, know your source. Talk to them, ask about their process, and see how they work to prevent contamination. Be aware of the risks and the benefits. You’ll have to buy it from an in-state farmer or a producer willing to ship it as “unfit for human consumption.” Federal law forbids the transport of raw milk across state lines when it’s intended for humans.

There is thing that compares to raw milk straight from the cow. It’s amazing and gorgeous. Oh, the cream! : )

Before I wrote this, I re-read Ed Behr’s piece about real cream in The Artful Eater. It made me want to run out and buy some (not very practical at 11:00pm). I know of a couple local producers, so I’ll have to check them out.

Serious food cravings come at the most inopportune times. : ) You aren’t going to believe the color of the cream.
