Nika, I'm glad you liked it. I know a number of people who simply don't like foie gras, even when they've had very good preparations. Like everything, it's not a taste that everyone likes. But if you like liverwurst, that seems like you're well on your way.

Cindy,
Of course many of the same groups that oppose foie gras work diligently to educate people about the state of other farm animals. But the press tends to focus on foie gras, because it's unlikely to upset their readers or their advertisers. Can you imagine a paper running a big expose about a pig farm while simultaneously running an insert from a supermarket about a sale on pork chops? I certainly can't imagine it happening more than once. Likewise, a newspaper isn't going to make its readers uncomfortable about the chicken and eggs they're eating.

I'm living in France at the moment, and right now you can find foie gras on many, many menus. It's quite common. I've eaten it frequently here and I certainly enjoy the taste of it, but it's definitely something I ponder. It's really helpful to have this information, Derrick.

Whether or not one believes the practice to be cruel, I think it's interesting how little attention is generally paid to the state of all kinds of animals in factory farms who are responsible for providing us with the vast majority of the meat that's consumed in the U.S. Foie gras, cruel or not, seems like such a tiny percentage compared to the big picture.

I really appreciated this article. I learned alot, have a better sense for what the issues are around foie gras, political and technical.

When I crave liver, its usually the beef liver and onions variety that you might get at a good hauf brau in Texas; big, oniony, sticks to the bones and very bold flavor. I have yet to have memorable foie gras (mostly because I have only tried it in a cold pate that wasnt the best quality - mind you I ADORE liverwurst.. maybe my tastes are too rough? :-))
