FDA Request for Comments on Pre-Cut Vegtables


The U.S. Food and Drug Administration has issued a draft of guidelines for pre-cut vegtables.

When I first read this, I thought, “Oh, come on!” But after I thought about it, I was surprised they didn’t already have guidelines for this common convenience. When you cut vegetables in advance, you provide more surface area for bacteria to attack and contaminate. It makes sense to have a set of standards about proper handling.

You can send your own comments about the proposal within 60 days of the draft (issued a couple days ago).
