Bacon That Cancels Itself Out?

Jack from Fork & Bottle sent me this story from the San Jose Mercury News about a genetically modified pig that produces bacon rich with heart-healthy omega-3 fatty acids, which you normally get from fish. The researchers seem more interested in understanding heart disease than producing pigs with this genotype, but expect similar results about livestock in the near future.

I’ve mentioned before that biotech companies want to introduce genetically modified foods that have key health benefits, but so far they’ve focused on produce: GMO animals fall into a different, stricter category of FDA regulation. The large companies that produce GMO’s want to win public support by offering multivitamin-like produce instead of plants that can resist herbicides.

Should biotech firms pursue these “foods with benefits?” If the government fully tested new breeds of animals, would it be okay?
