Northern California Slaugtherhouses


Bruce Cole, who now publishes Edible San Francisco in addition to his well-known blog Saute Wednesday, recently posted an article about slaughterhouses from the magazine. It’s a good look at the complicated logistics of beef slaughter in Northern California.

When we buy local meats, we usually focus on where the animals lived. Bruce looks into where they died. He uses a few producers in the area to illustrate the points It’s longer than a typical blog post, but I’m sure you’ll find it as interesting as I did.

Bruce’s piece is fascinating, I agree. I’m working with some ranchers now, and it’s quite an education, seeing how the animals are treated in life and death.
