I have to agree- I'd rather eat grass fed than vaccinate myself and my children against a preventable illness.
isnt E coli something needed in the GI tract for proper function? One can not knock out all bacterial species .. the animal will not be able to process some vitamins and minerals, process some plant materials etc. Knock out just E. coli O157:H7 and another variant will take its place, perhaps less lethal or more, cant know until you reduce the diversity of the intestinal flora by knocking out E. coli O157:H7. E. coli O157:H7 is prevalent through the ecosystems exposed to these cattle, as stated in your press releases, re-contamination of the animal is almost certain.

Your link doesnt work but I found this one regarding the vaccine (http://www.mediarelations.k-state.edu/WEB/News/NewsReleases/ecolivaccine.html)

What this article is suggesting is that humans get vaccinated against a particular E coli species (presumably E. coli O157:H7).

I personally would object to getting vaccinated so that I can eat poorly butchered beef or plants that are exposed to pastures that have an endemic exposure to this variant.

I would not have my kids vaccinated either, they have enough to cope with in terms of vaccines.

Researchers at our research institutions are doing more to look into the possibility of eliminating E. coli from livestock, and a vaccine is in development. Dr. David Renter from Kansas State University has done research on the grass vs. grain-fed issue, and recently put out a press release on the topic, which could add to your debate. The press release can be found at: http://www.mediarelations.k-state.edu/WEB/News/NewsReleases/ecoli92706.html.
