The CIA Continues Green Initiative
The Culinary Institute of America (CIA) in Hyde Park, NY announced last week that they are undergoing a new “green” initiative, and to that end, they have removed paper cups and lids in all of their dining facilities. Considering the campus uses between 15,000 and 18,000 disposable cups a week, this is certainly good news.
“We took a look at the usage and decided we could do our part to reduce the CIA’s paper waste,” says Peg Graham, CIA associate director of dining services, in a recent press release. “This is a good incentive to look around and see what we can do in other areas as well.”
This isn’t the first step the CIA has taken to reduce their footprint. Last year, the college ditched their white paper dinner napkins in favor of a recycled one, a move that not only saves the environment, but saves the college money as well. The college also has a recycling and composting program and they were recently presented with $337,571 in rebates for recognition of their six new high-efficiency student townhouses.
